喝紅燒牛肉湯,體內黃麴毒素較高

  近年來,林口長庚醫院臨床毒物科主任林杰樑儼然成了捍衛「吃的安全」的正義使者,揮舞著「專業知識」的大劍,為民眾健康把關。身為毒物科醫師,林杰樑吃得很謹慎。                                                                                                                                             
  他的養生之道說來簡單做來難!少鹽、少糖、油適量,生鮮、當令食物最好,不迷信健康食品或生機飲食,便宜的蔬果吃來健康又愉快。                            
                                                                                                                                                      
菜價狂跌 農民就不會灑農藥                                                                                                                          
  去年菜價起跌驚人,時為菜金時為菜土,菜貴時,林家就以冷凍蔬菜取代。他可不是受經濟拮据所困,他說,菜價好時,農民急著搶收,農藥殘留往往來不及消退。   
  「當菜價狂跌,農民連灑農藥的意願都沒有,正是吃的最安心的時候。豬肉也是一樣,豬肉貴時,提前宰殺的豬隻體內恐有抗生素殘留。」                          
                                                                                                                                                      
一條10元四破魚吃得新鮮開心                                                                                                                         
  這個冬天,林家經常吃的是一條10元的四破魚,四破魚屬於最小型的鯖魚,而且魚油含量豐富;花飛魚更是新鮮又好吃;最近跌價至一顆20元的高麗菜,更是林家餐桌 
  最近的常客。                                                                                                                                       
                                                                                                                                                     
  林杰樑說,他絕對不碰發霉的食物,例如豆腐乳、豆瓣醬、福菜、雪裡紅、鹹白魚、金華火腿等,「這些食物真的好可怕!」                                     
                                                                                                                                                     
  以豆瓣醬做湯底的紅燒牛肉麵,林杰樑碰都不碰。他的實驗室曾經檢驗吃紅燒牛肉麵喝湯與不喝湯的分別,結果發現,喝紅燒牛肉湯者,體內黃麴毒素遠遠高於不喝湯 
  者。「若愛牛肉麵,還是選清燉的吧!」                                                                                                                
      
                                                                                                                                                
肝硬化到肝癌 恐是發霉食物作怪                                                                                                                      
                                                                                                                                                     
  「好多不曾感染B型肝炎、C型肝炎的病患,卻出現肝硬化,最後走上肝癌一途,極有可能就是飲食中的發霉食物作怪。臨床上,實在看了太多了!」                 
  為了孩子,林杰樑與太太以身作則,拒絕垃圾食物。他鼓勵孩子多喝豆漿,他說,東方人乳癌較少,抽菸者罹患肺癌的機會也比西方人低,這些東方奇蹟多與大豆食品 
  有關,他建議,與其喝牛奶,不如多喝豆漿。                                                                                                           
                                                                                                                                                     
  國內早年並無毒物科,林杰樑是腎臟專科醫生,而過去中毒病患均由腎臟科醫師治療,在長庚醫院看了20多年的中毒病患,林杰樑將毒物科做大,從農藥中毒、安眠藥 
  中毒,擴及環境中的毒物、職業中的毒物傷害。                                                                                                         
                                                                                                                                                     
  林杰樑的父母都罹患癌症,他在「防癌保健靠自己」自序中寫道:「在短短三年內,令人 難以置信的,雙親都 罹患癌症,無數的夜晚和白天,妻與我陪著兩位老人家,度過了不知多少化學治療及放射治療的晦暗日子,雖然身為醫師,但為人子對癌症的無力感卻是一種更深沈的『痛』。」                                     
                                                                                                                                                     
  不必迷信流行解毒餐、生機飲食                                                                                                                       
                                                                                                                                                     
  至於流行的解毒餐、生機飲食,林杰樑說,「提倡排毒餐、解毒餐的人,真是壞透了,人家生病已經夠可憐,還趁火打劫,殺人無數。」                           
                                                                                                                                                     
  癌症病患化療之後抵抗力很差,卻聽信街坊流言,開始吃生機飲食,卻不知道寄生蟲正會趁虛而入;                                                           
                                                                                                                                                     
  或是糖尿病患狂吃紅蘿蔔,血糖飆至五、六百。                                                                                                         
                                                                                                                                                     
  在專業的領域裡,林杰樑不斷放砲,他不以為意的笑說,「我大概是不受歡迎人物吧!但這個社會總要有人扮黑臉,開放的社會經過討論,得利者始終是老百姓。」
